Zucchini Fritters with Feta and Dill
Zucchini Fritters with Feta and Dill
Serves: 8

2 medium zucchini
1 t salt
1 T chopped fresh mint
1 1/2 T chopped fresh dill
1 large scallion, thinly biased sliced
2 t minced garlic
1/4 t pepper
4 oz crumbled feta cheese
Zest of 1 lemon
1 large egg
3 T flour
Canola oil for frying
1/2 cup Greek yogurt
Finishing salt - coarse, for garnish

Grate zucchini with large hole grater. Squeeze out moisture
Combine zucchini, mint, dill, scallion, garlic, pepper, feta, and zest (reserve some for garnish)
Stir in egg and flour and combine well

Form fritters and fry, 4-5 minutes per side

Drain and season

Serve with dollop of Greek yogurt, dill sprinkle, reserved zest  and finishing salt.
