White Chicken Chili with Kerrygold Aged Cheddar Cheese
Ingredients


1 tsp olive oil
1 med. onion chopped, 1 cup
1 med. yellow bell pepper chopped
1 tbsp. minced fresh Serrano pepper
1 1/2 tsp. ground cumin
1 box frozen creamed corn, defrosted
1 7oz. can mild green chilies
2 cups milk
1 15oz. can navy beans, rinsed and drained
2 cups Publix original rotisserie chicken
1 1/2 c. (4 oz.) shredded Kerrygold Cheddar Cheese

Instructions
In a large skillet, heat oil over high heat. Add onion, pepper, and jalapeno and cook, stirring often till onion is softened about 3 to 4 minutes. Add cumin, corn, green chilies, milk and navy beans. Bring to a boil and reduce heat, cover and simmer for 10 minutes stirring occasionally. Add chicken and salt and pepper to taste. Stir in the aged Cheddar cheese and serve immediately.
