Wasabi Shrimp Crackers
8 oz. low fat cream cheese, softened
3-4 tsp. wasabi paste
30 2 inch thin rice crackers
30 medium shrimp; peeled, cooked and halved lengthwise
1 green scallion, thinly sliced
6 Tbsp. sweet chili sauce, optional
Puree cream cheese, with wasabi to taste, in a food processor until smooth. Mound 1 tsp. cream cheese mixture on each cracker and top with 2 shrimp halves. Sprinkle with scallion. Top each with a tsp. sweet chili sauce, if desired. Serve immediately. These are easy to make and very tasty. Serve them on a bed of mixed greens that have been washed and well dried so the crackers don't absorb the moisture.
