Turkey breast with Stuffing on Big Green Egg
Ingredients1 fresh turkey breast- deboned, and butterflied.
sun-dried tomatoes, scissor-snip the tomatoes until small or chop them into bite size
1 pkg. of stuffing mix (you may not use the whole package)
chicken broth enough to make the stuffing wet but easy to handle
1 small can of diced green chiles
1 lb Shitake mushrooms chopped
1 onion diced
salt and pepper
Split the turkey down the side to make a pocket. Sauté mushrooms, onions in chicken broth. Add the pkg. of stuffing mix, chiles, and the sundried tomatoes. Mix well and spoon the stuffing into the middle of the turkey breast. Salt and pepper the mixture. Close the turkey breast and tie with string. Roast indirect on the BGE at 350º for 30-40 minutes. Remove the turkey, remove the string, and slice into diagonal medallions and serve with Grandma’s white gravy on the side.
