Tequila Vinaigrette for Spanish Mackerel
Ingredients
1/2 cup lime juice

1/2 cups lemon juice

6 ounces orange juice

6 ounces red wine vinegar

1/2 cups white vinegar

1 cups sugar

1/2 cup fruit sections, diced

1 cup tomatoes, diced

1//2 cup lemon sections, diced to 1/4-inch cubes

1/2 cup lime sections, diced to 1/4-inch cubes

1/4 cup cilantro, minced

1/4 cup fresh basil, minced

1/4 cup fresh parsley, minced

3 ounces tequila

2 ounces triple sec




Instructions
In a stainless steel bowl combine all juices and mix thoroughly. Add sugar and mix thoroughly until sugar is dissolved.

Add tomatoes, fruit and herbs to bowl.

Mix thoroughly. Add tequila and triple sec.

Cover and refrigerate until ready to use.
