Ingredients1 lb of jumbo shells
1 lb Italian sausage out of the casing
16 oz of Ricotta cheese
4 oz Parmesan cheese
1 lb cooked,drained,chopped spinach
2 cups of spaghetti sauce
Cook sausage as you would ground beef for tacos. Cook the shells till a little past al dente. Plunge in a bowl of cold ice water. Drain and place on a towel to dry. Once the sausage is cooked place it in the Kitchen Aid food processor along with the spinach.Pulse till it is in small pieces. In a large bowl combine the Ricotta cheese,Parmesan,sausage/spinach combination. Fold to incorporate.In a large casserole dish place a little sauce in the bottom to cover. Open the cooked shells and begin stuffing them with the mixture.Place in casserole dish and bake at 350 for about 45 minutes.
