Stuffed New Zealand Mussels
Stuffed New Zealand Mussels
3 doz. New Zealand Mussels
16 oz of mushrooms (your choice, the more different the better the stuffing)
6 oz Parmesan cheese
6-8 oz Seasoned bread crumbs
3-4 oz Herbs (Basil, Parsley, Thyme)

Clean the mussels and set on a bed of Rock salt to stabilize them. Using a food processor chop the mushrooms and combine with the herbs, bread crumbs and cheese. If the filling is to dry add a little Chardonnay. Take a mussel and spoon on the filling . Pat it in place. Place in a 350 degree oven for about 18-20 minutes. Remove and serve.
