Strawberry Antipasto
Strawberry Antipasto

1pt. Florida Strawberries, sliced
3tbsps. Olive Oil
3tbsps. Water
3tbsps. Red Wine Vinegar
2tbsps. fresh Mint, chopped
2tsps. Dijon-style Mustard
2tsps. Orange Blossom Honey or your facorite Honey
1 Clove Garlic, minced
1/4tsp. Salt
1/4tsp. Black Pepper
1/2 small, Cantaloupe, peeled, seeded and cut into thin wedges
1c. Red and/or Green seedless Grapes
2 Nectarines and Plums, pitted and cut into small wedges
1/4lb. Parmesan Cheese, thinly sliced
1/4lb. Prosciutto or Smoked Ham, thinly sliced

Whisk oil, water, vinegar, mint, mustard, honey, garlic, salt and pepper in a large bowl. Pour into a seelable container and chill for at least 24 hours!! Arrange remaining ingredients, dividing equally on individual serving plates or arrange on a platter. Chill!

Just before serving, spoon vinaigrette over antipasto. Serve immediately.
