Stir fried Shrimp with Bacon, Mint, and Chiles
2 tsp. vegetable oil
1/4 lb. thickly sliced bacon cut crosswise, 1 inch thick
3 garlic cloves,minced
1 serrano chile
1 1/2 lb. shelled and deveined large shrimp
salt and pepper
1/4 c.white wine
6 tbls. chopped mint

In large skillet, heat oil. Add the bacon and cook over moderate heat, stirring occasionally until most of fat has been rendered. Spoon all but 1 tbls. of the fat from the skillet. Add the garlic and chiles and stir fry until fragrant, about one minute. Add the shrimp, season with salt and pepper and stir fry over moderately high heat until pink and curled, about 3 minutes. Add wine and cook until nearly evaporated, about one minute. Stir in the mint. Transfer to plate and serve.
