Spinach salad with orange tarragon vinaigrette
6 cups baby trimmed spinach
4 sun dried tomatoes
¼ cup smoked mushrooms
¼ julienne red onions
3 T feta cheese
3 T orange tarragon vinaigrette

4 T extra virgin olive oil
2 T tarragon vinegar
1 T orange blossom honey
1 T chopped fresh tarragon
2 t fresh garlic
Pinch of salt and freshly ground pepper

For the Vinaigrette Combine all ingredients Into mixing bowl and beat with loose whip until well incorporated For the salad Start by sautéing onions in a light amount of oil under medium heat, add mushrooms then smoked mushrooms Add vinaigrette remove pan from heat and add spinach Toss lightly and add a pinch of salt and pepper to taste, do not cook spinach over heat at all, remember this is a salad, not wilted spinach. Top with feta and serve room temp
