Special Onion Jam for the Black Pepper Biscuits (recipe follows)
Ingredients
Serves: 1/4 cup

1 tsp butter
2 onions, thinly sliced
1/2 c balsamic vinegar
1/4 c light brown sugar

Instructions
Melt butter in a sauté pan over medium heat
Add the onion slices and cook, stirring occasionally, until they soften and begin to caramelize –about 10 minutes
Add vinegar and brown sugar, salt, and pepper
Reduce heat to low and simmer until vinegar reduces and mixture has a thick, jam-like consistency – about 15 minutes
Taste, and adjust seasonings if needed

The microphone and patter duties were carried out by Kevin Jenkins (Fats) and the technical side was done by Karen Jenkins Kevin's most able wife. Mike Stock (Pappa of Peppers) was absent for this show, he was kicking up his heels at another event and was obviously missed.
