Spanish Style Garlic Shrimp with Ham and Bell Peppers
Ingredients2 lbs large shrimp (Ga. wild shrimp if you can get it, shelled, leaving the tail section in tact).
Salt & Pepper
8 cloves of garlic sliced very thin
1/4 lb cooked ham (Serrano) diced
1 red bell pepper med (diced fine)
1/3 cup sherry
Season shrimp with s&p and let rest for about 10 minutes. In a heavy skillet (All Clad Copper Core), heat the garlic slices over med heat until golden brown. Remove with a slotted spoon. Add the ham and cook about 2-3 minutes. Add the bell pepper and cook until soft. Add the shrimp and garlic. Cook about 2 minutes. Remove from heat source, add the sherry and cook until the shrimp are cooked through (do not OVERCOOK)slightly pink they are done. Serve family style, you may want to garnish with some choped fresh parsley.
