Soft Shell Crab
1 crab per person(have the fish monger clean your crabs)
3 eggs
2 cups flour
2 cups bread crumbs

Heat a large skillet to about med high with a med olive oil or canola oil. Dredge the crabs in the flour then the egg wash then into the bread crumbs. Place into the oil and cook on each side for about 1-1/2 mins. Drain on paper towels and re season after removing from the oil. Serve with remoulade or Tartar sauce
