1 Roasting chicken or Turkey
1 batch of your favorite stuffing
Wood chips

Get your BGE up to about 350-375. Wash your bird with cold water and pat dry,repeat. Season your bird with your favorite spice inside the cavity and out .Make your stuffing right before you plan on using it and allow it to cool about 1 hr. Stuff your bird loosely and close over the flaps of skin. Place in the v rack and insert your Polders,1 in the stufing(160) and one in the thigh(180). The wood you use for smoking is a personal preference. You can use both wet and dry chips or just one. Let the bird rest when it comes off the egg. Cover loosely with a foil tent.
