Smoked Salmon,Crispy Bacon , and Maytag Blue cheese salad
8 slices of cooked bacon
1 tsp of Dijon mustard
1 tsp of white vinegar
1 tsp of chopped garlic
8 oz Maytag Blue cheese
1/2 cup buttermilk
12 oz of washed, rewashed and washed again spinach(no dirt)
2/3 cup very thinly sliced red onion
1 pound smoked Salmon (Smoke your fish on the BGE with Alder wood chips)
In a food processor combine the egg, mustard, vinegar and garlic. With the machine running SLOWLY drizzle in the oil. Now with the machine still running add the blue cheese, and buttermilk. Season the dressing. In a mixing bowl toss the spinach with the dressing (your preference on how much.) Mound the spinach onto the center of the plate and crumble the salmon on top. If you want you can just place the filet of salmon on top. Top the salmon with the crumbled Bacon.
ChefNote: You could smoke the salmon on the Camerons Indoor Smoker using the Alder sawdust provided by Camerons. Proceed with recipe after smoking fish.
