Smoked Portabella Caps stuffed with collard greens and ham hocks
Ingredients
4 large portabella mushrooms stemmed and cleaned
6 oz cream cheese
3 meaty ham hocks
3 cups of chopped collard greens
Salt and pepper to taste
1 tbl Apple Cider Vinegar
1 cup of bread crumbs
1 ts. Chopped Garlic
1 tbl Chopped Onion

Instructions
Bring ham hocks to a boil in about 6 cups of water, then reduce to a simmer for about 1 ½ hours until the meat is tender. Shred the meat and reserve the stock. Sear the onions and garlic in a sauté pan with drizzle of vegetable oil. Add the collard greens and wilt. Add the shredded pork and ¼ cup of the stock and stew for about 1 minute. Add the cream cheese and the bread crumbs and mix until well blended. Stuff the mixture into the portabella mushroom caps and place in a 350 degree oven for 20 minutes
