Smoked Chicken Fettuccine Alfredo ( Chef Fred style )
Serves: 5

Fred does not measure this dish. However, it does work without it.

Fettuccine, cooked according to the box directions
Heavy whipping cream
Parmesan cheese

Smoked Chicken:
Chicken Breasts
Salt and pepper to taste
1 ½ Tbl Olive oil
2 tsp. Crushed fennel seed
1 tbl Zesty Love rub

Marinate chicken breasts in a mixture of olive oil, a bit of crushed fennel seed and a Tbl of Zesty Love rub.
Smoke over low heat with some mild wood (chef Fred likes Apple) chips at 250º until internal reaches 155º, remove chicken breasts, let cool and set aside

In a sauce pan combine some whipping cream and butter. Cook until the mixture almost comes to a boil, stirring continuously.
Reduce heat and begin to add Parmesan cheese.
When the mixture thickens, take off heat.
Stir continuously the entire time.
After sauce is made pour over fettuccine. You can add other things but in this case we added smoked chicken breast cut into chicken finger shapes.
Mix well to re-heat the chicken breasts and serve.
