Shrimp and Sausage over Cheese Grits
Serves: 4

1 lb 21-25 shrimp Peeled & Deveined
1 lb of your favorite smoked sausage sliced
1/2 cup of grits
1/2 lb of your favorite spicy cheese
3+ cups chicken stock (divided)
2 stalks of celery chopped (medium)
1 small onion chopped (medium)
1/2 stick butter

In a large stock pot bring enough chicken stock to a boil to cook your grits (follow package directions). Save a 1/2 cup of the chicken stock for later. In a large sauce pan begin heating a little oil and starting heating up your sausage. Add the onions and celery. Add a little chicken stock maybe 1/2 cup. When the grits are finished add the butter and cheese stir to incorporate, cover. Add the shrimp and adjust the seasoning. Taste it first. In a deep bowl pile on some cheesy grits and top it with some of the sausage and shrimp mixture. Enjoy. .
