Shrimp Soup with Tomatoes and Feta Cheese
Ingredients1 cup frozen chopped onion
1 tsp bottled minced garlic
3 tbls olive oil
1 cup dry white wine
1 (8-ounce) bottle clam juice
2 (141/2-ounc) cans Italian-style diced tomatoes
1 tsp salt
1/2 tsp pepper
1/2 tsp crushed red pepper
1 lb large peeled and deveined shrimp, fresh or frozen
1 cup crumbled feta cheese
1. In a large sauce pan over medium-high heat, cook the onion and garlic in the olive oil until the onion is tender, about 5 minutes. 2. Add the wine, clam juice, tomatoes, salt, pepper, and crushed red pepper and bring to a boil. Reduce the heat to medium and simmer for 10 minutes, until thickened. 3. Add the shrimp, and cook 4 to 5 minutes just until the shrimp turn pink. 4. 4 add the feta and stir until softened.
