Shrimp Scampi Genovese
Serves: 12

2 sticks Butter
Extra Virgin Olive Oil
2-3 Cloves Garlic mashed
16/24 Peeled shrimp (tail on)
Salt and White Pepper to taste

Melt butter in a 10 to 12" sauté pan, add a little bit of olive oil to keep the butter from browning. Do not brown butter before you add the olive oil. Add garlic and stir it until it is fragrant and slightly cooked (about 2 minutes). Add shrimp and Salt and White Pepper stirring until shrimp have just cooked and been coated with the butter garlic mixture. Serve Serving Size: 12
