Seared Salmon Salad
Serves: Yield 2

2 - 6 oz. salmon fillets skinless and cut into
1/2 inch strips
2 - tablespoons Chef Paulís Blackened Redfish Magic
1 - tablespoon olive oil
1/2 cup Stonehaven Shiraz
1 bag Fresh Express Salad
Naturally Fresh Blue Cheese Dressing

Season the salmon strips with the Chef Paulís Seasoning. Heat a large skillet over med-high heat for 2 minutes. Add the oil and salmon. Sautť for one minute per side(or until center is done). Add the wine and simmer until evaporated. Divide the salmon strips evenly onto your favorite Fresh Express Salad that has been tossed with blue cheese dressing.
