Seared Pork Medallions with Roasted Corn, Tomato, Okra and Bacon Sauce
Ingredients2 Pork Tenderloins, washed, trimmed and cut into 2 inch medallions
3 tbsp vegetable oil
1/4 lb smoked bacon, small dice
1/2 onion, sliced
3 ears fresh corn, roasted and cut off of ear
5-6 fresh okra, sliced thin
3-4 large tomatoes, peeled, and rough diced
1/2 cup chicken stock
1 stem rosemary, minced fine
Salt and pepper to taste
Directions for Sauce: In saucepot, add bacon and cook over medium heat crisp. Add onions and cook until tender, Add roasted corn, tomatoes, okra, chicken stock and rosemary, season to taste and allow to simmer on low heat for 10 minutes. Directions for Pork: Season pork medallions with salt and pepper. In large preheated saute pan, add oil and place pork medallions in pan, being careful not to overcrowd the pan. Cook 2 minutes or until brown and turn to other side, finish in pan to desired temperature. Serve immediately!
