Seared Duck Breast
Ingredients3 med sized duck breasts S&P
1 pint of blackberries
1/2 cup Baslamic vinegar
1 cup Water In a med sauce pan bring the blackberries,water and baslamic vinegar to a boil. Cook about 15 -20 mins. Strain the sauce into another pot and continue to reduce til thick like a syrup. Place score marks on the fatty skin side to help render the fat. Heat a med sized All Clad skillet to about med. Place the duck skin side down and begin to cook about 3 mins. Turn and cook about 1 more minute. Duck should be cooked to a medium rare. Slice on the bias and nape the sauce on top.
