Ingredients1 small red onion diced fine
1 small green pepper diced fine
6 med button mushrooms sliced
3 tablespoons BUTTA
1/2 c of half & half
8 eggs (Room temp)
1/2 c of finely shredded cheese
1 tsp of sniped chives
In a med Teflon saute pan slowly on med melt the butter. wait till the foam subsides then saute the veggies. While you saute begin cracking the eggs in a med size bowl. Add the 1/2&1/2 and whisk hard. When the veggie are still al dente add the eggs and start scrambling. Season with S&P and keep scrambling. The eggs should get fluffy and dry add the cheese.When the cheese melts add the chives. *** When whisking the eggs pull the eggs up and look for strands. If the strands are thick keep beating.
