Sauteed Arugula with Shitake Mushrooms
Sauteed Arugula with Shitake Mushrooms
Ingredients
2 tbsp unsalted butter
2 cloves garlic, sliced
4 oz shitake mushrooms, diced
4 cups baby Arugula, washed and drained
Salt and pepper to taste

Instructions
In preheated saute pan over medium heat, add garlic and cook for 30 seconds. Add mushrooms and cook for 2 minutes. Add arugula, salt and pepper to taste, cover and cook for 1 minute or until greens are wilted.
