Sausage Stuffed Mushrooms
1/4 c. plus 1 tsp Extra Virgin Olive Oil
1 1/2 lb. mushrooms, wiped and stemmed, (save and chop the stems)
6 oz. hot Italian sausage, (remove from the casings)
6 oz. sweet Italian sausage (remove from the casings)
1/4c. finely chopped onions
2 Tbl. finely chopped celery
2 Tbl. finely chopped bell pepper
1 tsp. minced fresh garlic
1/4c. plain bread crumbs
1/4c. grated Parmesan cheese
2 Tbl. plus 2 tsp. Italian parsley
1 tsp. Love Rub (or a teeny bit more)

Preheat oven to 400º. Pour olive oil into large bowl. Add mushroom caps and toss. Combine Parmesan and bread crumbs to sprinkle over mushroom caps later. +++++++++++++++++++++++++++++==++++++++++++++++ Cook sausage until browned, about 2 minutes. Add onions, celery, pepper, mushroom stems, and garlic. Cook about 30 seconds. Remove from the heat. (let this cool no more than 2-3 minutes before processing it, overcooking the vegetable in this stuffing is to be avoided) Put mixture in a food processor. Add 2 Tbl. parsley, Love Rub, and rest of olive oil. Pulse until stuffing comes together, no more than 30 seconds. Fill each mushroom cap with heaping tsp. of stuffing. Place on baking sheet. Sprinkle mixed Parmesan and bread crumbs over mushroom caps. Bake at 400º 15 to 18 minutes. Highly endorsed recipe....
