Sausage Chili
Sausage Chili
1 tablespoon of oil
2 lbs of Andoullie sausage
2 cups chopped yellow onion
fresh chopped garlic to taste
1-12oz dark beer
1-28oz can of whole tomatoes,crushed and their juices
3 tablespoons of tomato paste
1teaspoon of sugar
6 cups of red kidney beans drained and rinsed salt and pepper to taste
1 cup of cheddar(for garnish)
1 cup of chopped green onion(for garnish)
2 tablespoons of chili powder

In a large stockpot over med heat,warm the oil.Add the sausage and brown,about 5-6 bins. Add the onions,garlic,chili powder and cook till the onions are soft about 4-5 bins. De glaze the pan with the beer and stir about 1 min. Add the tomatoes,tomato paste,sugar and the kidney beans. Stir well and bring to a boil.lower the heat to med- LOW and cook uncovered for 30 mins, stirring often to prevent chili from sticking to the bottom of the pot.
