Roast Pork Loin with Whole Grain Mustard and Guinness Glaze
Ingredients
2 pounds pork loin, trimmed, tied, and seasoned with salt, pepper, garlic

Glaze
½ cup whole grain mustard
4 Tbl Dijon mustard
1 tsp dried mustard
6 ounces Guinness beer
Crushed black pepper, to taste

Instructions
Preheat oven to 375º. Place roast on lightly oiled sheet pan; place in oven and roast until an internal temperature of 150º is reached. Combine glaze ingredients. While roasting, baste with glaze every 15 minutes until the roast is done
