Rib Eye Steak stuffed with Maytag Blue Cheese
2 1/2 lb Rib Eye Steak

3 oz Maytag Bleu Cheese
Salt and pepper to taste
SeeNote: Cut horizontal slit in large rib eye steak. Stuff with blue cheese. Salt and pepper both sides of steak Cook on Hot 400 degree direct fire for 2-3 minutes a side. Place steak in pie pan or other suitable pan and after turning the steak carefully the second time, cover with foil. Reduce the heat on the Big Green Egg to 250 degrees and leave on the side (off the coals) of the grill for 12 to 20 minutes depending on thickness of the steak, pull it off from the grill at internal temperature of 135 for rare, let rest another 5 minutes off from the grill and serve sliced.
