Redneck Watermelon and Chicken Tacos

2 cups ripe cherry or grape tomatoes cut in half

2 large jalapeno pepper chopped fine with seeds and veins (for heat )

1 large real sweet Vidalia onion thinly sliced

2 tablespoons extra-virgin olive oil

3 cups chopped grilled chicken breast or (shredded rotisserie chicken )

Juice of 2 limes,

Salt to taste

2 cups chopped  seedless watermelon

1 1/4 cups fresh cilantro

3/4 cup crumbled Cotija cheese

12 small flour  tortillas

Coolie sauce (optional but sends tacos over the top )

½ cups miracle whip  or mayo

1/3 cup Mexican creama

4 tablespoons of finely chopped fresh cilantro

Juice of 2 limes

1 tbl white sugar

Whisk all together pour in bottle to squeeze on tacos , can add more lime juice to make thinner and add more lime flavor  



Heat 1 tablespoon olive oil in a medium skillet over medium-high heat.
Add the tomatoes, chopped onions and half of the jalapeno.
Cook until the vegetables have soften , about 4 mins
Add the chicken, the juice of 1 lime and 1/2 teaspoon salt.
Simmer until warmed through, about 2 minutes. Keep warm over low heat.
