Raspberry Chicken
Raspberry Chicken
2 whole boneless chicken breasts
2 Tbl. butter
1/4 c. finely chopped onion
4 Tbl. raspberry vinegar
1/4c. chicken broth
1/4 c. heavy cream
fresh raspberries

Cut each chix breast in half and flatten. Cook chix in butter and remove from skillet. Add onion to pan and cook about 15 minutes. Add vinegar and cook till syrupy. Whisk in chix broth, cream. Simmer 1 minute. Return chix to pan and simmer till done. Add raspberries to sauce and cook on low heat for 1 minute.
