Ingredients1 large onion
6-8 plum tomatoes Diced
In a 6 qt sauce pan heat a little oil and begin sweating the onions. Season the onions and cook about 7-10 mins. Then add the tomatoes and stir in the herbs. Cook about 15-20 mins to evaporate the liquid.
** If you wish to have a smoother sauce place some into your Kitchen Aid food processor and pulse till you get the consistency you want, but be careful!
