Pumpkin Bread
Serves: 6 - 8

3 1/2 c of flour (All Purpose)
2/3 c water
1 tsp freshly grated nutmeg
1 c oil
2 c pumpkin(can works well)
2 tsp of baking soda
1 1/2 tsp salt
3 c sugar
1 c chopped pecans

Grease 2 loaf pans and set aside. Preheat oven to 350ยบ F. Combine sugar, nutmeg, flour, salt and Baking Soda in a large bowl. Add the water, nuts, pumpkin and oil. Mix well and make sure it is well blended. Pour into loaf Pan and bake for about 1 hour and 15 minutes. Check for doneness with a tooth pick. Unmold and serve warn with a BIG scoop of Butter Pecan ice cream.
