Potato Wrapped Salmon
Ingredients4 - 4 oz Salmon filets
6 oz Dijon mustard
3 large white potatoes
Peel the potatoes and place in a bowl of cold water.This will help in the oxidation process. When you have everything ready grate the potatoes on a box grater(large holes). Take the salmon filets and shmear them with the dijon mustard,then season. Roll them in the grated potatoes. Lay them on a sheet of plastic wrap and wrap them tightly for about 15 mins in the fridge. Heat a large skillet to med high,add a little olive oil. Remove the filets from the wrap and begin searing the potatoes.****Remeber that the potatoes will have lots of water and oil and water don't mix so it will spit and spatter. When brown on the bottom turn and finish in a 350 degree oven till done.
