Potato Encrusted Sea Bass
1 nice sea bass filet about 8 oz per person
1 washed russet potato
salt and pepper

Slice the potato (skin on) and shingle on the filet. In a med high All Clad skillet gently and carefully place the filet in the pan which has a little oil in it. Place with the potato side down. after about 1 1/2 mins carefully turn over. Finish the fish in a 350 degree oven for about 8-10 mins
