Poached Snapper with Coconut Sauce
2 fillets of snapper(any firm flesh fish will do)
poaching liquid = (1 cup clam juice and 1/2 cup white wine)
1 can of coconut milk
2 packs of Uncle Ben's rice pilaf
In a sauce pan over medium heat begin reducing the coconut milk. In a large sauté pan slowly bring up the temp of your poaching liquid. Do not boil the liquid. Medium temp at the highest. Season the fillets with S&P. When the coconut sauce is almost ready that is the time that you add the fish into the poaching liquid. The fish will probably take about 10 - 15 minutes to poach. Take the rice and microwave it and have it ready to go. When the fish is done carefully remove it from the poaching liquid. On a plate put down some rice, then the fish then drizzle the thickened coconut sauce over the fish.
