Pan Seared Skirt Steak with Anchovies and Lime
Ingredients

4 6oz. skirt steaks
1 Tbl. fresh lime juice
Kosher salt and pepper
1 Tbl. Extra Virgin Olive Oil
1 2oz. can anchovy filets, drained and minced
2 scallions, minced
1 large garlic clove
1/4 c. water


Instructions
Rub the steaks with the lime juice, salt, and pepper. Let stand for 10 minutes. +++++++++++++++++++++++++++++==++++++++++++++++ In a skillet heat the olive oil. Add the steaks and cook over high heat until med. rare., 4 minutes: transfer to plates and keep warm. +++++++++++++++++++++++++++++==++++++++++++++++ Add the anchovies, scallions and garlic to the skillet and cook over moderate heat, about 30 seconds. Add the water and simmer until the sauce has thickened, about 30 seconds. Pour the sauce over the steaks and serve.
