Pad Noodle Stir Fry
Ingredients
Serves: 4

1 pack of pad noodles
1lb of 26-30 shrimp P&D
1/2 lb yellow squash sliced med
1/2 lb zucchini sliced med
1/2 lb mushrooms sliced
1/4 c sliced sweet onions

Instructions
**** Have everything ready to go this is a FAST dish. *** 1 bottle of Fish sauce *** 1 bottle of Oyster sauce In a med sauce pan bring 3 cups of water to a boil, add a little Fish and Oyster sauce. Stir to combine. Taste(this will be the broth that your noodles pick up. Adjust the seasoning adding more or less but no salt.) Start cooking your noodles. In a large Wok begin heating a little oil just enough to coat the pan. Bring that heat up to almost high. Add the onions cook about 1 minute add the squashes, and mushrooms. Add a little Oyster and or Fish sauce. (If this is getting thick on you add a little broth form your noodles). Cook about 2 - 3 mins.add the shrimp. They will turn a bright orange when almost done TURN OFF THE HEAT. Drain the noodles and pour into a large bowl. Pour stir fry on top and enjoy.
