Orange flavored Zabaglione over Fresh Seasonal Berries
Ingredients6 egg yolks
2 tbsp sugar
1/4 cup champagne
1 tbsp orange zest, minced
2 cups fresh berries, washed and drained
Beat the egg yolks and sugar in a double boiler over simmering water until thick and pale yellow. Add the champagne and orange zest and continue cooking, whisking vigorously, until mixture thickens enough to coat the back of a spoon. Place berries in brandy snifter, drizzle with Zabaglione and garnish with fresh mint.
