Mustard Pepper Salmon with a red wine sauce.
Ingredients
Serves: 4

4-5 ounce salmon filets
1 Tbs cracked pepper
1 Tbs mustard seeds
2 Tbs of oregano
2 tsp of extra virgin olive oil
1/2 cup red wine

Combine the mustard seed, pepper and oregano in small bowl. After Removing its skin, press the seed mixture into the salmon. Heat oil in non stick pan and cook till done turning once. In small sauce pan add the wine and reduce by 2/3's. ladle the wine sauce over the salmon and serve.
