Morrocan Spiced Char-Grilled Cornish Hens (Master Chef Tony)
Spiced Butter Rub
Green Onions, fresh cleaned 2 each
Ginger, fresh & peeled 1 inch
Garlic Cloves 2 each
Cilantro, fresh, rough 2 Tbsp.
chopped Mint, fresh, rough chopped 2 Tbsp.
Italian Parsley, fresh, rough 2 Tbsp. chopped
Kosher Salt 1-1/2 tsp.
Spanish Paprika 1-1/2 tsp.
Lemon Zest 1 lemon Turmeric tsp
. Lemon Juice 2 Tbsp.
Cumin, ground 1-1/2 tsp.
Cayenne Pepper pinch Black Pepper 1 tsp.
Butter, soft 1/3 cup
Cornish Hens, halves 4 halves

Method of Preparation: 1. Prepare the Spiced Butter Rub-Combine all ingredients for the Rub except for the butter. Place into a food processor and blend into a paste. 2. To complete the Spiced Butter Rub add the soft Butter & blend well. 3. Rub the Spiced Butter Rub over the skin & inside the cavity of the Cornish Hens. Allow the Cornish Hens to marinate for at least 2 hours under refrigeration, covered. Reserve left over Spiced Butter Rub for basting. 4. Heat a Charcoal grill or Char-broiler about 20-30 minutes prior to cooking. 5. Arrange the marinated Cornish Hens over the hot coals & grill for approximately 8 minutes and turn over for the skin side down & grill for 5-8 minutes & baste with the remaining Spiced Butter Rub. Baste & turn every five minutes or so. Cornish Hens must be crisp, golden brown & the internal temperature must be 165F. 6. Serve with grilled Eggplant & Zucchini.
