1 lb Thin sliced boneless veal
(many markets sell this for scaloppini)
1 cup All purpose flour
1 tsp Sea salt
1 tsp fresh ground pepper
3 Tbl finely chopped flat leaf parsley
2 Large eggs
½ tsp Garlic powder
1 cup Seasoned bread crumbs
1 cup Peanut oil – for frying

Setup Pan with hot oil for frying 3 plates, 1 flour, 1 beaten egg, 1 bread crumbs Preparation Beat veal to as thin a filet as possible (lay veal between 2 sheets of plastic wrap to make this easier). Add salt, pepper, parsley, garlic powder to beaten eggs. Pass veal through flour, egg mixture, and the finally seasoned bread crumbs Pan fry until golden brown Serving Suggestion As a main course with garlic mashed potatoes and tomato salad As a sandwich, in a crusty French roll with lettuce, tomato and mayonnaise (or Horseradish mayo)
