Mike’s Simple Vegetable Stir-Fry
1 Tbl peanut oil
2 Tbl grated ginger
2 Tbl real garlic mashed or minced
1 or 2 bell peppers cut into strips
1 red onion cut into bite-size pieces
1 or 2 small zucchini cut into bite-size pieces
1 small jalapeno slivered
1/3 head of red cabbage slivered
½ pound mushroom caps sliced in half
Salt and freshly ground white pepper
Flavoring sauce
1/3 cup of soy sauce
1/4 cup of Mirin or rice wine vinegar
2 dash-shots of oyster flavored sauce (2 tsp)
1/4 cup chopped green scallion tops
1/4 cup chopped peanuts

Cut vegetables, mix flavoring sauce, heat wok to very hot. Add the oil, ginger and garlic while stirring quickly so that the garlic does NOT brown. Add the vegetables a handful at a time so that the wok doesn’t get cooled off, stir-fry constantly. After the vegetables (especially the mushrooms and cabbage) have wilted considerably add the flavoring sauce quickly stirring to coat the vegetables and reduce the fluid. When the vegetables are coated and somewhat cooked (do not overcook) remove from the Wok sprinkle chopped scallion tops of the top and serve. The cooking time should only be about 3-4 minutes tops.
