Marinated Short Ribs
Marinated Short Ribs
2 lbs. short ribs

2 Tbl. dark soy
2 Tbl. light soy
2 Tbl. honey
3 Tbl. Hoisin sauce
2 Tbl. ketchup
1 Tbl. sugar

Mix the ingredients for the marinade in a large bowl or 2 gallon plastic bag, add the short ribs, toss and let sit for at least 2 hours (best overnight). Grill on the Big Green Egg at 225º for about 1 hour, check internal temperature at 45 minutes, when you see 170º pull the Short ribs and wrap them in foil for 1/2 hour. Some ribs will be tougher than other cuts so be prepared to re-wrap the ribs in the foil and give them extra time in a 275º oven to finish.
