Local Green Salad with Garden Herb Vinaigrette and Flat Creek Colby
Ingredients
Serves: 2

6 oz of greenhouse mixed baby lettuce
½ red pepper brumoise
1 tsp Fresh copped thyme
1 tsp Chopped Chive
1 tsp chopped oregano
1 clove garlic minced
½ shallot minced
½ cup Rice wine vinegar
2 tblsp sugar
½ cup blended oil
Salt to taste
2 oz Colby

Instructions
Add herbs, garlic, shallot, sugar, vinegar and let marinate for 20 minutes. Slowly whisk in oil and add pepper and season with salt to taste. Season salad greens with a pinch of salt and add 2 oz of vinaigrette. Toss, taste and plate. Add 1 oz of Colby to each plate.
