Linda's Chicken Salad
Ingredients
1 pkg. boneless, skinless chix breasts

Seasoning for the chix

parsley flakes
garlic salt
thyme
pepper
Paul Prudhomme's poultry seasoning
Italian dressing

Season one side of the chicken heavily. Drizzle some Italian dressing over each breast. Bake chix at 350 for 20 to 30 minutes. Don't overcook.

For the salad

4 to 5 shakes of white wine vinegar
celery seed
3 to 4 stalks of celery, diced
white pepper
garlic salt
3 to 4 heaping Tbl. of HELLMAN'S mayo (Mikenote: even Hellmans light tastes good)

After cooking the chix breasts, let them cool in the refrigerator. Chop into bite size pieces. Add all of the salad ingredients. Mix, taste, and add more seasoning if needed. Chill and serve with the banana bread.
