Latitude 31 Cole Slaw
1 head fresh cabbage
1-1/2 cups mayonnaise
1 cup sugar
1/2 tsp ground black pepper
1 tbs white vinegar
1/2 tsp kosher salt
1/4 whole onion

Coarsely chop the head of cabbage. Using a food processor with the "S" blade, fill the hopper with the chopped cabbage and onion (do not pack). Using the pulse feature, continuously pulse, using short bursts, until the cabbage is finely chopped. In a large bowl combine all other ingredients with the processed cabbage and onion. Mix thouroughly to blend flavors. Best when made serveral hours in advance. Store in a covered container. Label, date, refrigerate and rotate.
