Hot Cheesy Beef Dip
Serves: 4 Cups
2 (8 ounce) jars dried chipped beef
1 green bell pepper, finely chopped (small green pepper)
1 onion, finely chopped (small onion)
2 (8 ounce) packages cream cheese, softened
1 (8 ounce) package shredded Cheddar cheese
Preheat oven to 350º F. Rinse chipped beef in a bowl of water and drain and pat dry. Chop the beef (if not chopped) into bite size or julienne strips. Blend the cream cheese till soft and buttery in a Kitchen-Aid mixer using the flat blade. Add the dried chipped beef, green bell pepper, onion, & Cheddar cheese. Mix for several minutes to completely incorporate all ingredients. Spoon mixture into two small oven-proof dishes or Ramekins that have been sprayed with cooking spray, or into a buttered 3/4 qt. casserole dish. Bake uncovered 30 - 45 minutes in the preheated oven, or until center is bubbly and edges are lightly browned. Serve in the decorative casserole dish or in the two ramekins. Chefs Choice would be to prepare two ramekins. Heat one to serve when guests arrive, and then heat another a little later so that late arriving guests can also have some of this delicious beef dip.
