Horiatiki Salata (Greek peasant salad)
Ingredients1 Head of romaine lettuce
1 pint grape tomatoes
1 cucumber peeled, leaving a few strips of green skin on.
1 green pepper , cut into rings (optional)
1 small red onion, sliced in thin rings
1 Tbsp. capers ( more if you like)
3-4 pepperocini peppers ( optional )
1/4 cup feta cheese, crumbled ( to taste )
Kalamata olives ( to taste )
2-3 anchovies ( optional )
radishes ( optional )
4 hard cooked eggs, cut in quarters
A platter, to arrange and serve salad on
(tradition is to just use Good quality olive oil and red wine vinegar for dressing and to season with salt - pepper- oregano )
For a vinaigrette dressing
1 -2 tsp Dijon mustard
extra virgin olive oil ( to taste ) 3 part /
red wine vinegar ( to taste ) 1 part /
1 tsp. Salt, pepper, oregano ( to taste )
1-2 cloves of garlic ,smashed and minced.
Wash vegetables and set aside to drain. Make the dressing, refrigerate. Cut vegetables to bite size. Arrange everything, nicely on the platter, except for the eggs and anchovies they will go on the top of the salad. Pour the dressing over the salad and serve.
