Hash Brown Breakfast Casserole
Serves: 8

1 pound hot pork sausage
1/4 cup chopped onion
4 potatoes (shredded)
5 eggs (lightly beaten)
8 ounces sharp cheddar cheese (shredded)
1 3/4 cups milk
1 cup all purpose baking mix
1/4 teaspoon salt
¼ teaspoon pepper
8 ounces sour cream

Preheat oven to 350º. Cook sausage and onions in a large skillet over medium-high heat for five minutes or until meat crumbles. Stir in shredded potatoes and cook 5 to 7 more minutes, or until meat is no longer pink and potatoes are lightly browned. Drain mixture well on paper towels and spoon into a greased 13 x 9-inch baking dish. Stir together eggs and next five ingredients, and then pour evenly over the sausage mixture, stirring well. Cover and chill for 8 hours. Bake, covered with non-stick foil, for 45 minutes. Uncover and bake for 10 to 15 more minutes, or until a wooden toothpick inserted into the center comes out clean. Remove from the oven and let stand 5 minutes. Spoon sour cream over the top of each serving. Enjoy!
